Next restaurant has revealed the three menus it will run in 2014: "Chicago Steak,""Chinese: Modern" and "Trio, January 20, 2004." The year's first four months will be dedicated to chef/owner Grant Achatz's and executive chef Dave Beran's vision of the ultimate Chicago steakhouse, with a higher price than usual "due to the cost of high-quality dry aged beef," the restaurant announced.
The May-August menu will attempt to put Chinese cooking in "the mind-set of culinary innovation," and that last menu refers to the multi-course meal that Achatz served Nick Kokonas at the Evanston restaurant Trio to convince him to become partners in a new venture, the now-three-Michelin-starred Alinea. (Achatz and Kokonas opened Next in 2011.)
This year's Next menus have explored hunted/foraged food, vegan cuisine and the Bocuse d'Or culinary competition. Tickets are available only via the Next website.
